Every now and then when I have to think of what to cook and having to cook just seems like a pain in the butt, I need some inspiration so I go back to my saved foodie magazines and start browsing. I did find two very simple recipes that are healthy and quick.
Blueberry Salsa with Salmon
Use chicken instead of the salmon or whatever meat you like and have on hand. Keep the meat simple by just adding some spices and pan frying until it is done, then serve with the salsa.
Meat of your choice for 4 servings
1 (6 oz) package blueberries
1 Tbsp minced jalapeno, seeds removed
Finely grated zest and juice of 1 lime
3 green onions, thinly sliced
8 basil leaves, thinly sliced (about 1 Tbsp)
1/2 tsp sea salt
1 Tbsp olive oil
Lightly crush the blueberries. Add the rest of the ingredients and let stand at least one hour room temperature.
Coffee-Chai Chia Pudding
This is a little different from my usual recipe. Here the yogurt gets added on top of the pudding just before serving. I like the yogurt mixed in at the start. Your preference.
1/2 cup brewed strong coffee, cooled
1 can coconut milk
2 Tbsp pure maple syrup
1/2 tsp pure vanilla extract
1/2 tsp ground cinnamon
1/4 tsp each ground ginger, cardamom, and coriander
a grind of black pepper
1/2 cup chia seeds (either white or black)
1/4 to 1/2 cup plain yogurt
Mix everything together except the yogurt and let sit for 1 hour, stirring occasionally. If it is not sweet enough add a bit more maple syrup. Add the yogurt and mix in gently or dollop yogurt over pudding before serving. You can refrigerate up to 3 days if it lasts that long.
